Blueberry Peach Cobbler
If you are looking for a warm summer dessert, this Blueberry Peach Cobbler is it! It is fruity, and sweet, and is a great dessert to go with any cookout you’ll have this summer. It’s also super simple to make, I’m alllll about easy baking and as little of a mess as possible! I also love baking or cooking anything in my cast iron skillet, so if it can be made in it, then I’m for sure going to make it!

I know you all love sourdough as much as I do, but this recipe doesn’t have sourdough discard in it! If you want my sourdough bread recipe, here she is! This can also be made with dinner or add in ingredients to make it a sweet treat!

Ingredients
6 to 8 cups fresh peaches, peeled and sliced (about 6-8 medium peaches)
1 1/2 -2 cups fresh blueberries
2/3 cups sugar
2 1/2 tablespoons cornstarch
1 teaspoon ground cinnamon
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 stick of cold unsalted butter, cubed
1⁄2 cup heavy whipping cream or 2-3 tablespoons of milk.
Instructions
Preheat oven to 375°.
In a medium bowl, combine peaches, blueberries, 1⁄3 cup sugar, cornstarch, and cinnamon.
In another medium bowl, whisk together flour, 1⁄3 cup sugar, baking powder, and salt. Using a pastry blender or a fork, cut in butter until the mixture is crumbly. Add cream or milk as needed, stirring gently just until dough forms. Spoon fruit mixture into a cast-iron skillet; top with crumbled dough.
Bake until top is golden brown and the filling is bubbly, bake for about 45 minutes. Serve with a scoop of vanilla bean ice cream and enjoy!

That’s it! Of course, a knife to slice the peaches, but other than that, this recipe is VERY simple and easy to make. I would say it will take you about an hour for the entire process, and SO well worth it! Your family or guests will go back for seconds.
